Students tasting beef from Mr. Beavers farm

Students at Hancock Central School recently had an exciting opportunity to explore the journey from farm to table through a special presentation by Mr. Beavers, our School Resource Officer and local farmer. Mr. Beavers raises grass-fed Piedmontese beef at his 5 Jackalope Ranch and shared insights about the importance of a healthier, more honest food system. Piedmontese beef is naturally lower in fat, fewer calories, and higher in protein compared to conventional beef, making it a nutritious choice for families.

During his visit, Mr. Beavers visited Mrs. Keller's Career Tech class and discussed how quality farming practices, animal care, and food production all connect to the meals we enjoy. He explained that raising grass-fed beef differs from conventional farming by emphasizing environmental stewardship, soil and ecosystem health, natural diets, and pasture-based living, whereas conventional farming often focuses on rapid, grain-based feeding and efficiency.

To bring the farm-to-table concept to life, students prepared a short rib dish using beef from 5 Jackalope Ranch the day before his presentation. Mr. Beavers said his favorite part of the experience was seeing students learn about and enjoy real, healthy food. After the hands-on cooking, students shared the meal together, reinforcing lessons in teamwork and community.

Beyond producing high-quality beef, Mr. Beavers’ ranch contributes to the local community in meaningful ways. He participates in school fundraisers that promote healthier eating and help raise funds for local schools. Through these efforts, students learn that farming requires hard work, but the rewards (quality food and stronger community connections) are worth the effort. His ranch also produces and sells a variety of beef jerky, combining traditional flavors with protein-rich, high-quality ingredients, giving families another way to enjoy local products.

This event highlighted not only the journey of food from farm to table but also the importance of collaboration, family involvement, and community engagement in creating meaningful experiences. Hancock Central School thanks Mr. Beavers for sharing his expertise and inspiring students to connect with local agriculture in a memorable and educational way.
